Dreamland Understory grows small-batch King Oyster and Maitake at Dreamland Ranch in Sequoyah County, Oklahoma, for restaurant kitchens across Eastern Oklahoma and Northwest Arkansas. Every mushroom is cut to order against a standing weekly schedule, harvested close to the day, if not the day of, it reaches your kitchen. Nothing is warehoused. Nothing is trucked in from out of state. Opening production is being built around confirmed chef orders, so the first harvest schedule belongs to the kitchens that asked for it.
Opening production includes a conditional commitment of approximately 50 to 70 pounds per week across Conifer and Ryn in Bentonville.
Slow grown in a humid fruiting room and harvested at peak for immediate delivery.
They join the schedule as kitchens ask for them, not on a fixed season. And there will be demand.
